(Serves 3–4)
1 tbsp olive oil or coconut oil
1 small onion, finely chopped
2 garlic cloves, minced
1-inch piece fresh ginger, grated
1 medium sweet potato, peeled and diced
1 cup red lentils, rinsed
1 can chopped tomatoes (400g)
1 tsp curry powder (or to taste)
½ tsp turmeric (optional)
Salt and black pepper, to taste
2½ cups water or low-sodium vegetable stock
Fresh coriander for garnish (optional) Sauté onion, garlic and ginger in oil, stir in spices, then add sweet potato, lentils, tomatoes and stock; simmer for 20–25 mins until soft, season and serve.
