Lentil & Sweet Potato Curry

(Serves 3–4)

  • 1 tbsp olive oil or coconut oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 1 medium sweet potato, peeled and diced
  • 1 cup red lentils, rinsed
  • 1 can chopped tomatoes (400g)
  • 1 tsp curry powder (or to taste)
  • ½ tsp turmeric (optional)
  • Salt and black pepper, to taste
  • 2½ cups water or low-sodium vegetable stock
  • Fresh coriander for garnish (optional)
    Sauté onion, garlic and ginger in oil, stir in spices, then add sweet potato, lentils, tomatoes and stock; simmer for 20–25 mins until soft, season and serve.
