(Serves 2)
1 can chickpeas (400g), drained and rinsed
2 tbsp Greek yoghurt (or plant-based alternative)
1 tsp Dijon mustard (optional)
1 tbsp lemon juice
Salt and pepper, to taste
2 slices red onion, finely chopped (optional)
2-3 tomato slices
1 small celery stalk, chopped (optional crunch!)
4 slices whole grain bread
Lettuce or spinach leaves Mash chickpeas in a bowl, mix in yoghurt, lemon juice, mustard and seasonings. Spread onto bread slices, add lettuce and tomato and close the sandwich.
