Chickpea Salad Sandwich

(Serves 2)

  • 1 can chickpeas (400g), drained and rinsed
  • 2 tbsp Greek yoghurt (or plant-based alternative)
  • 1 tsp Dijon mustard (optional)
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 2 slices red onion, finely chopped (optional)
  • 2-3 tomato slices
  • 1 small celery stalk, chopped (optional crunch!)
  • 4 slices whole grain bread
  • Lettuce or spinach leaves
    Mash chickpeas in a bowl, mix in yoghurt, lemon juice, mustard and seasonings. Spread onto bread slices, add lettuce and tomato and close the sandwich.
